We don't really consider the impact of nutritionally void, processed foods on our emotional and mental health. Unfortunately, the standard American diet contains packaged foods where the vitamins and minerals were stripped out for processing, then added back in to be “fortified”, thus falsely appearing to be good for you.
When our brain doesn't get the nutrients it needs and becomes inflamed due to a diet typically high in carbohydrates and low in fat, it starts malfunctioning. This is similar to a car that is fed a mixture of gas and water. It may run, not so well, and will eventually break down. A car needs gas. The human brain needs fat.
Brain-based problems associated with poor nutrition and gut health include anxiety, depression, Alzheimer's, Schizophrenia, ADHD, Autism, and brain fog. David Perlmutter wrote an excellent book called “Grain Brain” that goes into the research and scientific backing as to why gluten and grains negatively impact your health. It is definitely worth the read!
